Evaluación del efecto antimicrobiano del gel de aloe vera y ácido cítrico en apio (Apium graveolens) cortado en fresco
Abstract
El presente trabajo evaluará la evolución del contenido en ácido cítrico y gel de sábila como antimicrobiano en apio (Apium graveolens) cortados en fresco durante su almacenamiento, determinando la calidad organoléptica del apio (Apium graveolens) tratado con gel de aloe vera y ácido cítrico y un análisis microbiológico de recuento total de coliformes.
Las frutas y hortalizas son seres vivos que siguen respirando y transpirando después de ser recolectados. Las frutas y hortalizas son climatéricos tiene una elevada tasa de respiración y esto hace que la maduración se a más rápida. (RIVERA, 2014)
Se utilizó un método experimental factorial completo de cuadrados latinos 3 x 3, exploratorio usando como muestra apios cortados en frescos divididos en 10 bolsas de 100 gramos. Se realizaron las muestras en el laboratorio de biología de la Universidad Especializada de las Américas (UDELAS).
El tratamiento con gel de sábila y ácido cítrico redujo significativamente la pérdida de firmeza durante el almacenamiento en frío. Este recubrimiento comestible nos ofrece retardar ciertos procesos fisiológicos que merman el crecimiento bacteriano en el apio (Apium Graveolens).
